Cozy Sweet Potato Hash

This is my favorite hash to make in the fall and winter, and it has all the makings of a balanced macro bowl! This makes two servings!

Ingredients

1 package/4 links of apple chicken sausage (Aldi, Trader Joes, and health food stores have great options)
1 tablespoon or so of coconut or avocado oil
1 sweet potato
1 small/medium red onion
1 zucchini
1-2 free range eggs


what to do

〰️ Warm your pan + oil
〰️ Add a diced sweet potato & cover with a lid to steam for a few
〰️ After a few minutes, add your diced onion & sauté
〰️ Next add your zucchini & thinly sliced sausage
〰️ Sauté all together until veggies are cooked through & everything is lightly browned
〰️ You can also add a bit of salt, garlic powder and red pepper flakes, but not much is needed
〰️ Scoot everything to one side and crack an egg (or two) right in the pan. Fry over easy and serve on top of your hash, trust me 👌🏻
〰️ Optional: a few dashes of hot sauce (I love classic Cholula for this) to make your bowl a bit sweet & a bit spicy
