Avocado Sourdough Toast with Eggs
I can’t get enough of this avocado sourdough toast with eggs! It’s such a delicious meal that’s helped me get in healthy fats and protein during my pregnancy so far, but I would enjoy it absolutely anytime 😉
ingredients
1 slice of sourdough bread
1/2 avocado
1-2 tbsp of tahini
2 eggs
salt, pepper & other seasonings of choice
what to do
+ set your oven to broil and place your sourdough slice directly on the top rack to toast (a toaster is great too, but I’m loving this method lately). Make sure to keep an eye on it and flip it over when it turns golden!
+ over medium heat, crack two eggs directly into the pan and break up gently, stirring often to make a soft, yolky scramble (I use avocado oil btw) // or over-easy eggs are delicious as well!
+ in the meantime, mash your avocado and tahini together
+ assembly time! On your toast, spread your avocado+tahini mixture then gently slide your eggs on top.
+ seasoning-wise you can get creative, but I love Himalayan pink salt, freshly cracked black pepper, garlic powder, everything bagel seasoning, and some crushed red pepper 👌🏻
